Tomato and Leek Soup

Tangy and full of flavor, perfect when paired with grilled cheese.

Ingredients :

  • 1.5L of Tomato Juice
  • 750 ml of Vegetable Broth
  • 3 to 4 Leeks
  • 1 small bulb Garlic, minced
  • 2 to 3 Shallots, minced or 1 diced onion
  • 3 to 4 Carrots, diced
  • 1 cup of soup Noodles of choice
  • Salt and Pepper
  • Maple Syrup (to taste if too acid)
  • Additional seasoning of choice

Steps:
  1. Cut all the veggies to the desired size.
  2. Cook the leek until it softens a little.
  3. Add carrots and celery and cook until all the veggies are partially cooked.
  4. Add the tomato juice and vegetable broth, spices, maple syrup, and bring to a boil.
  5. Add the soup noodles and cook until they soften.
  6. Adjust the seasoning, then serve hot.
