Tomato and Leek Soup
Tangy and full of flavor, perfect when paired with grilled cheese.
Ingredients :
- 1.5L of Tomato Juice
- 750 ml of Vegetable Broth
- 3 to 4 Leeks
- 1 small bulb Garlic, minced
- 2 to 3 Shallots, minced or 1 diced onion
- 3 to 4 Carrots, diced
- 1 cup of soup Noodles of choice
- Salt and Pepper
- Maple Syrup (to taste if too acid)
- Additional seasoning of choice
Steps:
- Cut all the veggies to the desired size.
- Cook the leek until it softens a little.
- Add carrots and celery and cook until all the veggies are partially cooked.
- Add the tomato juice and vegetable broth, spices, maple syrup, and bring to a boil.
- Add the soup noodles and cook until they soften.
- Adjust the seasoning, then serve hot.
